Boston Cream Pie

YUMMY!!

White cake mix. bake according to box in 2 round pans.

Let cakes cool

Custard for middle, I'm at a high altitude, this recipe is set for lower altitudes.. I have yet to get it to work here any Ideas???

Custard
Melt
4T Oleo

2/3c cornstarch
2/3c sugar
1/2t salt
Mix good then add to butter

slowly add 4C milk, stirring, bring to a boil.
Remove from heat
Put some custard in 4egg yolks (you use the whites in your cake)
then mix into custard.
put back on heat boil 2 mins add vanilla.

to cool fast we put waxed paper on top of custard, then put the pan in a sink of ice water.

Cut your cakes in half so you can get 2 "pies" from this recipe!
Put the custard mix in between the layers

Glaze for on top
Melt 4T Oleo in a sauce pan
Add 3/4c cocoa
1 1/2 c powdered sugar..
Add 3t hot water stir in
add more water till you get it right drizzly..

Pie Crust

I double it and get 3 crust

1 1/2 cup flour
1/2t salt

cut in
1/2 cup shortening
Mix in 4-5 T ICE COLD water one tablespoon at a time until a ball is formed.

Roll out on a floured surface

Corn pancakes

Don't dis it before you try it.. trust me I did...

Mix together in bowl
2c. flour
1/2t salt
2t baking powder
2T. sugar

Mix
1 3/4 c milk
2 eggs
1/4c oil

blend together just enough to mix.
Drain 1 can corn or use 1 cup frozen corn (I prefer frozen) stir into batter gently.

Cook. like you normally cook pancakes.

Chick n McQueen (aka, chicken ala king)

Melt 6T butter
Stir in 1/2 c flour
3/4t salt
1/8t pepper

Add 2c milk
1c water (i use the water I cooked the chicken in)
1t chicken broth
cook and stir till thick and bubbly. Cook 1-2 mins more

Stir in 2 cups cooked chicken
4 oz jar mushrooms
and Velveeta cheese to taste (estimated about 4 inch slice?)

Heat thru and serve over toasted English muffins

Carrot Cake

Mix together
3 cups sifted flour
1t baking powder
1t baking soda
2t cinnamon
2 cups sugar

Add
1c veg. oil
4 eggs, beaten well
1t vanilla
2 cups fine shredded carrots
1 1/2 cups water
1 c chopped nuts

Bake 350* for 1 hr in an angel food pan

Frosting
1 1/2lb powdered sugar
1 stick oleo
1t vanilla
8oz cream cheese
