Shrimp Scampi

  • 1/4 cup olive oil
  • 1 lb peeled and deveined large shrimp (raw; 20 to 25 per lb)
  • 4 large garlic cloves, left unpeeled and forced through a garlic press
  • 1/2 teaspoon dried hot red-pepper flakes
  • 1/2 cup dry white wine (I leave out)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 tablespoons unsalted butter
  • 3/4 lb capellini (angel-hair pasta)
  • 1/2 cup chopped fresh flat-leaf parsley



  • Bring a 6- to 8-quart pot of salted water to a boil.

    Meanwhile, heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté shrimp, turning over once, until just cooked through, about 2 minutes, and transfer with a slotted spoon to a large bowl. Add garlic to oil remaining in skillet along with red pepper flakes, wine, salt, and pepper and cook over high heat, stirring occasionally, 1 minute. Add butter to skillet, stirring until melted, and stir in shrimp. Remove skillet from heat.

    Cook pasta in boiling water until just tender, about 3 minutes. Reserve 1 cup pasta-cooking water, then drain pasta in a colander. Toss pasta well with shrimp mixture and parsley in large bowl, adding some of reserved cooking water if necessary to keep moist.

    Peach or Apple Crisp

    1/2 c. rolled oats
    1/2 c. brown sugar
    1/4 c. flour
    1/2 tsp. cinnamon
    1/4 c. butter
    10 med. peaches or apples

    In mixing bowl combine oats, brown sugar, flour and cinnamon. Cut in butter until mixture is crumbly. Peel and core peaches or apples; slice and put into a baking dish. Sprinkle oat mixture on top of fruit and bake at 350 degrees for 40 minutes.

    I triple the topping.. and in place of the cinnamon I mix it up.. yesterday I used half cinnamon and half pumpkin pie spice.. i really wanted nutmeg but didn't have any... it tasted really good!

    rolled up hamburgers

    We love this. i can't remember where i got the recipe from but it's yummy

    1 loaf frozen bread dough thawed, rolled out like a pizza crust
    1lb hamburger cooked up (loose like for tacos)
    hamburger topping

    what i do can be changed
    spread dough with mayo
    put meat on
    put cheese and lettuce on.

    roll up jelly roll style place on cookie sheet seam down

    bake at 350* for about 20 mins or till bread looks done

    pumpkin Gobs!

    you remember those yummy chocolate gobs, well here's a twist!!

    for Cookies)
    Beat
    2 eggs
    2 c light brown sugar
    1 cup veg. oil
    1t vanilla extract
    stir till smooth
    Stir in
    1 15 oz can of pumpkin

    in separate bowl combine
    3c flour
    1T pumpkin pie spice
    1t baking powder
    1t baking soda
    1t salt

    add dry ingredients to wet one cup at a time blending each time till smooth

    Drop by heaping table spoons (I use the Pampered Chef medium cookie scoop) onto an ungreased cooking sheet. slightly flatten the cookie. Bake for 12 mins at 350*

    Transfer them to wire rack to cool

    filling
    4oz cream cheese
    1/2c butter softened
    2t. Vanilla extract
    4-5 cups confectioners sugar

    beat cream cheese, butter, and vanilla together till light and fluffy, mix in sugar half cup at a time. put filling in between 2 cookies!!

    good ol funnel cake!

    ingredients
    1 egg
    2/3 c milk
    2T sugar
    1 1/4c flour
    1/4t salt
    1t baking powder

    1. in deep skillet heat oil about 2 cups over medium high till hot.
    2 beat egg and milk mix all other ing. in separate bowl, slowly add to egg mixture beating till smooth.
    3. using a funnel, drop mix on to hot oil working from center out creating a web pattern..
    4 Cook for 2-3 mins (I flip when browned on one side) (to filp I use 2 spatulas and sandwich it in between them.)
    5 sprinkle with powdered sugar or cinnamon sugar serve warm!!

    Strawberrry Shortcake

    this is my MIL's recipe

    for the cake
    mix
    2 c. flour
    4t baking powder
    1/2t salt
    3T sugar

    mix then combine with dry ingred.
    3/4c milk
    1 egg beaten
    1/4c oil

    Bake at 350* for 20 mins till brown and tooth pick inserted in center comes out clean

    Slice up strawberries and mix with sugar. put strawberries and juice over top of short cake! My husband enjoys buttering the cake before putting his strawberries on top then topping with cool whip.

    Chili

    2 lbs ground meat
    1/2 onion chopped
    1/2 t garlic salt
    2 1/2 c tomato sauce
    1 80x jar salsa (this is where you can make it as hot or as mild as you'd like!)
    1 packet dry chili mix (again you can pick your "heat")
    1 15ox can each dark and light kidney beans

    Cook burger and onion till meat browned.
    Drain grease
    Add all other ingredients to the beef in pan mix well reduce heat to low and simmer for at least an hour..

    (I do mine in a crock pot, let simmer on low all day. you have to take the lid off for the last hr or so before you serve it so all the water will cook off.. (I don't like soupy chili))

    My Famous Cole Slaw (taste a lot like KFC's)

    8c shredded cabbage
    1/4c shredded carrot
    (I use the dole cole slaw mix in place of this)

    in bowl mix together
    1/3c sugar
    1/2t salt
    1/8t pepper
    1/4c milk
    1/2c mayo
    1/4 c butter milk (you can make your own by adding a little lemon juice to normal milk)
    1 1/2T white vinegar
    2 1/2 T lemon juice

    Pour liquid into cabbage/carrot mix stir. Refrigerate at least 2 hrs before serving (overnight is better) stir well before serving..

    Sweet potato casserole

    this is requested all the time in my house and when we go places
    Casserole
    2 29oz cans sweet potatoes drained and mashed
    1t vanilla
    1/2 stick oleo
    2 eggs

    In mixer mix all above. Spread in a buttered dish I use 9x13 because I like the topping to tater ratio if you'd prefer thicker taters do it in a smaller pan.

    Topping
    1c brown sugar
    1/3 c flour
    1/3 c oleo
    1 cup chopped nuts (walnuts pecans)

    mix together, put on top of casserole.

    Bake 350* for 1hr.

    Play dough

    Mix
    2pkgs of Kool aid any flavor
    2c boiling water
    2 1/2 c flour
    3T Cream of Tarter

    add to water.

    Honey Mustard (like McDonalds)

    5T mayo
    2T honey
    4t Grey Poupon
    1/2t vinegar

    blend.

    Cheese ball

    1 Jar Amour Slice dried beef
    2t accent
    2t Winchester sauce
    2 green onions chopped
    2 pks of cream cheese

    mix all together shape into ball. refrigerate. Enjoy

    Crab Ragoons

    1 pk wanton wraps

    2 c. finely chopped crab (i use imitation.)
    1 small onion finely chopped
    1 regular sized bell pepper finely chopped
    1 8oz cream cheese

    Beat crab, onion, pepper, and cream cheese together.

    put small amount on each wanton, fold up seal edges with egg. Fry till golding brown they cook fast


    Apple Dumplings

    for Dumplings
    combine
    2c. flour
    2/3t salt (1/2 +1/8t)
    4t baking powder

    cut in
    1/4c shortening

    Add
    3/4c milk and mix

    Roll out, and cut into squares.
    Place sliced apples in the center (I like to add cinnamon sugar on the apples)
    fold up. put in a pan seam side down

    Sauce
    1c sugar
    1T flour
    2T butter
    1/4t nutmeg
    2 c. boiling water

    pour over dumplings

    Bake 375-400 for 20 mins or so till browning.


    Pumpkin Pie

    combine
    3/4c sugar
    1/2t salt
    1t cinnamon
    1t flour
    add 1 1/4 c pumpkin

    Mix together
    2 eggs slightly beaten
    1c evaporated milk
    2T water
    1/2t vailla

    Combine both
    Pour into pie shell bake at 400* for 45-50 mins.

    This is a recipe where you'll need to make a pie shield over your edges.
